“For 22 years we’ve been preparing meals in a Canadian style for kids with Mazzola Enterprises. So now we have a very big business serving kids food at lunchtime. We also created a foundation to help kids who can’t pay for the lunches.” - Elena

“About a year-and-a-half ago I said, ‘What else can we do?’ Victor said, ‘Plan our retirement.’ I said, ‘I’m not ready to retire,’ so we started an Argentine restaurant.” - Elena

“Argentina has a big population of European immigrants, like Canada. In Argentina, there’s a mix of Italian, Spanish, French, German. It’s a potpourri of all those influences. Very interesting.” - Victor

“Everything grows in Argentina. The basic ingredients are high quality there. You don’t need to add a lot of spices; the raw material is very good quality. Everything is very fresh. We’re used to cooking like that.” - Elena

“In North America, you transform the ingredients. Argentinians prefer to use the original flavour of each element.” - Victor

“I like this area. It’s Little Italy, it’s Chinatown. It’s a mixture of things. I find it interesting.” - Elena

“This area is changing. There’s a lot of potential. There are going to be more neighbours around; new people, new ideas. We have to offer something new to them.” - Victor
